My Chicken Noodle Soup

So I “created” my own recipe for Chicken Noodle Nutrient Soup! It was so good and I was pretty proud of myself. Here it is!

Ingredients:
1-1/2 cups water
32 oz organic chicken broth
handful of baby carrots
2 celery stalks
1/4 of an onion
1/2 bunch of organic rainbow chard (I love red,orange,yellow colored stalks and all the vitamin K, A,and C makes this amazing!)
1/2 juice of lemon (zest the peel)
4 free range chicken tenders (or 1 chicken breast)
1/2 bag of orzo
2 seeded tomatoes
2 tablespoons of olive oil
few shakes of italian seasoning/bay leaves/pepper
Fresh parmesan cheese
This takes a few pots for me… but maybe someday I will get a pretty soup pot from william sonoma… but here is the pots and what to put in:
pot #1: boil water and cut up the chicken tenders into pieces and boil
Saute pan: (first put these ingredients into a food processor so you do not have to chop so many things) then saute celery, onion, and carrots until soft with olive oil and pepper
pot #2: boil water, chicken broth then add orzo, chard, and seasonings
When chicken is cooked, shred with a fork and add to pot #2, when celery,onion,carrots are ready add to pot #2… let simmer for 15 mins and add lemon juice and zest. (well, I set the table, warmed ciabatta bread in the oven, and started laundry so I think that was 15 minutes).
When ready to serve add fresh parmesan cheese to the top. Hope you like it!

I recieved one of her cookbooks as a gift this summer, & in addition to reading about her fabulous life of baking, raising kidos, and ranching, her recipes are DELICIOUS! The kidos and I made 2 this summer, her cinnamon rolls (beyond delightful) and her icebox cake, anywho, I enjoyed reading about your chicken soup, I will test it out. soon. after I try the new oatmeal cookie recipe from america's test kitchen.
