We just started participating in a produce co-op called Bountiful Baskets located in almost every state. I got all of this for $18: 1 pineapple, 1 watermelon, 1 cantaloupe, 5 nectarines, 13 limes, 7 bananas, 1lb carrots, 3lbs potatoes, pint grape tomatoes, 3 onions, lettuce, and a random new-to-me radish.
I am usually not a huge cantaloupe person bc when I order a “fruit salad” at lunch place it usually is all opaque canteloupe with maybe 2 strawberries and sad looking grapes. So… Off to Food Network I go for what to do with canteloupe…. Da Ta! This Giada recipe looked awesome!
I made some slight changes by halving the recipe bc I wasn’t sure I would like it. 🙂 I also subbed lime for lemons because as you can see, I had 13 limes to use up. It was have been great with lemons. I renamed this recipe “Mojito Melon Summer Salad” because being pregnant, it is as close to my favorite drink I will get for awhile.
