Sausage and Apple Stuffed Acorn Squash

Perfect for fall!  

  • Acorn squash
  • Onion
  • 3 stalks of celery
  • 1 Apple
  • Salt and pepper
  • couple garlic cloves
  • Olive oil
  • 1/2 lb sausage
  • 1 cup breadcrumbs
  • 1/2 cup parm or mozzarella cheese

Time saver: In the morning, split the acorn squash, scoop out seeds, and place it in the crockpot alone (no liquid) on low for 6 hrs so it will be ready for you to fill at dinner time! Then back in the crockpot until you are ready to eat it.

  1. Chop: onion, celery, apple, garlic
  2. In skillet with olive oil, saute celery, onion, salt and pepper
  3. add garlic, sausage until cooked, and apple
  4. add bread crumbs, cheese
  5. Oven at 200 for 20 mins (I just placed mine back in the crockpot until Joe got home to keep it warm since it was already cooked)
