Side Dishes

What you will find:

  • 3 Bean Salad
  • Thyme Whipped Potatoes
  • Green Beans with Toasted Pine Nuts
3 Bean Salad
* Mom-a-licous
Ingredients:
  • 1 can of each: kidney beans, black beans, garbanzo beans (chickpeas)
  • 2 celery ribs (remember I freeze mine, easier to cut and not waste them)
  • 1/2 small purple onion (again I freeze mine already chopped)
  • handful cilantro
  • drizzle EVOO
  • sprinkle ground cumin to taste
  • 2-3 tablespoons of your favorite vinegar
  • juice from 2 lemons or limes
  • minced jalapeno if you want
  • salt and pepper to taste
Directions:
  • Drain and rinse beans
  • toss it all together
  • refrigerate…. amazing!
  • This is a great source of protein, perfect as a side for dinner or lunch, it reminds me of summer!!!

I am using the pine nuts in the shrimp pesto and here with the green beans. I love the strong fragrance and taste pine nuts have when I toast them.
